Maybe one of the easiest salsas out there, but the trick is to get your hands on some tomatillos. Either fresh or in a tin.
In Australia, tomatillos can be found fresh during the late spring and summer months. Sometimes they can go into the autumn, depending on the region.
This recipe is called ‘salsa cruda’ in Mexico, which means raw salsa. And that is why it is so easy because you only need to wash the fresh ingredients and put them in the blender. So easy!
Salsa Verde
Salsa de tomatillo cruda
A 2-step salsa that is very simple to make but will impress everyone for its unique flavour. Make sure you get some fresh tomatillos if you can.

Ingredients
- 500 g fresh tomatillos substitute with a tin of tomatillos of 750 g
- 1 coriander bunch
- 1/2 white onion
- 2 garlic cloves
- 4 jalapeños substitute with green chillies
- salt to taste
- olive oil
Instructions
- Wash the coriander, jalapeños, tomatillos. If using tin tomatillos drain them and wash them.
- In a blender add the tomatillos first followed by the rest of the ingredients. Add olive oil and salt to taste. Blend until smooth
