México is rich in indigenous culture and its legacy can be appreciated in every corner of the country. Today, indigenous culture, traditions, and food enjoy an unprecedented appreciation and rediscovery by Mexicans and the world alike. But it hasn’t always been like this. Indigenous communities in México, and the world, still face many challenges but understanding more taking the time to understand more about them is a step in the right direction.
Removing the heat from the chillies can be easily accomplished by using one or a combination of techniques that will make sure that you enjoy your Mexican dishes without having to worry about whether chillies will be spicy or not. Given that chilli heat varies by season, region and climate, knowing whether a chilli will or not be spicy it a bit of an unknown.
To fully enjoy a tortilla it needs to be reheated properly. This way not only the texture but the aroma of the tortilla is perfected.
There are many different ways to reheat tortillas, but these are the ones that I think work best for those times you need to reheat more than one tortillas at once.

Everyone knows that Tequila is a Mexican treasure. This second-fastest selling drink worldwide, has resulted in a huge amount of people falling in love with the Mexican culture. And having the opportunity to learn first-hand the process of tequila making was an eye-opening experience and has increased my appreciation for this Mexican iconic drink.
Sometimes futuristic thoughts and scenarios pass my mind, one of which is, what would be the outcome of the US border shutting down the borders to Mexicans? Would more Mexicans immigrate to the much further massive country Australia? or would they choose to immigrate somewhere else?
As I am walking down the street, the smell of street food hits me! I love that smell! it’s the fresh corn tortillas, the unique smoky aroma of mezcal, the music by mariachis performers thirsty for tequila shots, the colours of the produce at the markets. Every sense is exhilarated all at once... I am back in my beloved Mexico!
There is an important reason behind the fact that the best tortillas are always found in small towns rather than the big cities!
