‘Alambres’ are a popular dish in Mexican cuisine that can be found in different combinations such as beef, chicken, vegetables, etc.
The ingredients are inserted in an ‘alambre’ or wire-like skewers and hence its name, but you can also prepare in a pot, where it can be more practical for the cheese to melt.😋
This dish, besides being delicious, is super easy and quick to prepare.😍

This recipe is normally prepared by inserting all the ingredients through a wire-like skewer and grilled on an open-flame grill. For this version, we are using a pot that will allow the cheese to melt all over.

Ingredients
- 500 g beef fillets
- 170 g bacon
- 1 green capsicum
- 1 red capsicum
- ½ white or brown onion
- 1 garlic clove
- 150 g mozzarella cheese substitute with any melty cheese
- Olive oil
- Pepper and salt to taste
To serve
- 12 corn tortillas preferably from La Tortilleria
- 2 limes
- Favourite salsa
Instructions
- Cut the meat and bacon into stripes, remove the ends and seeds from the capsicums and cut into stripes too, cut the onion into half moons and finely chop the garlic.
- In a medium-hot pan pour a little of olive oil and add the bacon, cook for about 5 minutes, then add the beef, garlic, salt and pepper to taste, stir and cook over low heat with the lid on for another 5 minutes.
- Once the meat is almost done, add the onion and capsicums, cook until the onion turns transparent, stirring constantly.
- Grate the cheese and add it over the meat, turn off the heat and let it gratin with the lid on for a few minutes.
- Reheat the tortillas and fill them in with the 'alambre' mixture. Serve it with half lime and your favourite salsa.

Notes
- For a vegetarian option, simply replace the beef and bacon for mushrooms and zucchini
- You can also replace the beef for your meat of choice, chicken, fish, pork, etc.
